Chocolate is made from the cacao plant native to South America, and has been a part of native rituals and religious practices for centuries.  The word chocolate itself comes from the Aztec word xocolatl, meaning "bitter water."  The cacao plant was so appreciated by the native South American cultures, that it was even used as currency! 

Making chocolate requires a process of fermenting, roasting and grinding the cacao seeds.  Today, most of the world's chocolate is produced from cacao grown in the Ivory Coast, Ghana, Indonesia, and Cameroon.  Not surprisingly, the demand for chocolate keeps growing, and recent studies show that dark chocolate helps to promote cardiovascular health and has a positive effect on LDL cholesterol levels.  Dark chocolate is the least processed of all chocolates, and therefore contains the most nutrients.

Chocolate chip cookies are a surprise in every bite.  Delight your family with pockets of chocolaty goodness by baking your own home-made chocolate chip cookies.  Most chocolate chip cookies have a chewy texture and can be eaten slowly – a great treat for Sunday brunches and family get-togethers.

Brownies are an American tradition, and some historians trace these chocolaty treats back to a Boston cookbook published in the early 1900's. These heavy, full-of-chocolate cakes are usually topped with chopped nuts and baked as a solid cake.  Once baked, the cake is divided into cookie-sized squares for serving.  Serve with milk or coffee for a chocolate-packed dessert.

Chocolate cake is a favorite the world over, and the variety of cakes is astounding.  Chocolate cakes are often layered with a fruit filling in between, such as the Black Forest cake.  The Molten is a rich chocolate cake served hot with a creamy liquid chocolate filling at its center.  Chocolate is commonly used as a glaze for a variety or desserts ranging from cheesecake to doughnuts.

Wild chocolate.  The rich and potent taste of chocolate allows for great creativity.  Dried fruits glazed in a hard chocolate shell are a popular delicacy.  Raisins and fresh wild berries are one of the most common fruits, but even fresh apples are commonly glazed in a sweet layer of chocolate.  Even vegetables can go well with chocolate.  Cocoa powder can be added to carrot cakes and pumpkin pies to enhance flavor.  Add chunks of dark ice cream to decorate other desserts.  Dark chocolate slabs can add a 5 star look to a scoop of ice cream.   Garnish with a few fresh mint leaves for a beautiful finish.

Hot chocolate.  The warm and smoothing sweet "soup" is a real treat on cold winter evenings.  Chocolate was originally consumed in liquid form, as solid chocolate was not created until the 1700's.  Chocolate drinks can be made with or without alcohol.  For a cold drink fit for the summer months, add chocolate to your favorite smoothie recipes.
