For those that are searching for vegetarian recipes that do contain fat, the following are flavorful Passover favorites.  To increase the nutritional value of recipes, experiment with replacing chemically processed fats such as margarine with natural oils.  When purchasing oils such as olive oil, opt for oils that are marked as "Cold Pressed."  Cold pressed oils are the least processed and have the optimal nutritional value.
