One perfect homemade mexican recipe is the cute recipe which is commonly known as green chili stew. Its easy to prepare. The first step in the preparation of this yummy chili stew is to take a large pot. Heat the large pot to a medium heat and pour oil into it and heat up the oil. Into the pot add the stew meat as well as the onions.
Cook the mixture till the onions become translucent. This will take about five minutes. After this step, its time to add tomatoes. The tomatoes are diced and are added along with the chiles. Beef broth as well as chile pepper is also added along with this mixture to give an extra taste to this spicy mexican green chili stew.
After this, the next important step is to add garlic, salt as well as cumin into the mixture and stir it well. You should also add enough amount of pepper too for providing the appropriate taste to this tasty dish. Now its time to keep the mixture for cooking and wait till it comes to boil. When the mixture comes to boil, reduce its heat and simmer it for an hour.
While simmering you can add extra amount of the beef broth. This depends on the texture of the stew in total. If you feel that the stew requires more beef broth, you can add or otherwise you don’t have to add the beef broth into the chili stew. When the stew is simmering you can add other food ingredients too into the stew.
For example you can add diced potatoes into the mixture. When you do this, you have to keep the stew for another 30 minutes. This is done so that the potatoes will become tender in texture. When all this steps are completed, the green chili stew is ready to serve.

I love this one on those occasional "cold" days we have here in Florida--and it's always a big hit at luncheons. I call it black bean/chili soup:

1 pound ground chuck
1 onion, medium, chopped
2 cans black beans with rice
1 jar of salsa (I use mild but that's my preference)
1 can chopped tomatoes
banana peppers, chopped
chili powder to taste (I use 4 - 5 tblsps!)
salt and pepper to taste
water
sour cream

Fry ground chuck, with onions, in a 2 quart pan. Add seasonings. When meat is brown and onions are soft, add the black beans with rice, salsa, tomatoes and peppers. I normally simmer this for 2-3 hours, adding water when necessary. Serve hot in bowls with a dollop of sour cream on top. I also serve it with a salad, corn bread or garlic bread.
