I have been working with the Culinary Institute LeNotre and am very impressed with their program - It is in Houston, heavily lab and technique based. They offer Associates in Applied Sciences in culinary Arts and Pastry Arts. Also Pastry Arts. Their instructor chefs are all French but one.
