Elana’s Pantry: Gluten-Free Recipes with an Almond Twist

Elana's PantryElana’s Pantry is the gluten-free cooking blog of Elana Amsterdam, author of The Gluten-Free Almond Flour Cookbook.  Elana’s recipes are suited for individuals with Celiac disease in a way that is creative, easy to cook and full of flavor.  We interviewed Elana about her blog and thoughts about home cooking.

Could you tell us a little about yourself?

I am a wife, mother and urban animal wrangler.  We live in downtown Boulder and have packed every square inch of our tiny yard with vegetables.  Right now we are feasting on arugula, mustard greens, and various types of lettuce.  The title of "urban animal wrangler" is because we have 2 bunnies (that live in our house) and 5 chickens (that do not).

I love to cook and because I like variety, I have fun making up new dishes for myself and my family.  This passion of mine lead to the creation of my book, The Gluten Free Almond Flour Cookbook.  The goal of my book (and everything I do) is to create win-win situations.  In terms of food, that means making dishes healthy enough for those with dietary restrictions and tasty enough for those with none whatsoever.

What are your favorite things to cook/bake?
 
Cookies!  I make cookies almost every day.  I also love salads and green smoothies, especially right now as we approach warmer weather.

If you could summarize home cooking into one quote, what would it be?
 
Hassle-free.  Someone on amazon.com left a review and called my recipes a "quick and dirty, dump and stir affair."  I think that pretty much sums them up.  No fuss!
