Jewish Recipe TraderJewishRecipeTrader.com features recipes from around the world, including African, American, Ashkenazi and Sephardic cuisines.  With recipes as varied as Indian Chicken Pathia and Algerian Spiced Eggplant, the site serves both as a reference for traditional Jewish recipes and as an exchange for contemporary dishes and new spinoffs on old classics.  We spoke with site creator Elie Chocron about the site and what inspired its creation.

Could you tell us a little about yourself?

I'm an amateur cook with an interest in Jewish history and culture. I wanted to develop Jewish Recipe Trader to share my own favorite recipes, to preserve recipes from Jewish communities that have dwindled or no longer exist, and to let others share and exchange their own recipes.

What was the inspiration behind creating JewishRecipeTrader.com?

After my mother passed away 10 years ago I started cooking some of the recipes she used to make and that I enjoyed. I decided that I wanted my own children to enjoy the same things I did, and this was also a way for them to connect with their grandmother. After a while I began posting the recipes to a blog (www.sephardicrecipes.com), but very quickly I decided that I wanted to expand to allow others to add their own recipes.

What can readers find on JewishRecipeTrader.com?

People might find common everyday and holiday recipes but they'll also find recipes from the Jewish communities of India, recipes from Jewish communities in North Africa and sub-saharan Africa, from western Asia, and the Americas. Jewish cooking spans the globe and everywhere that Jews have lived they've incorporated local cuisines into their own. There's much more than kugels and briskets (though we have plenty of those as well!).

What are your favorite things to cook/bake?

My favorite dishes are sauteed fish patties in a seasoned tomato sauce that my mother used to make, small meatballs made from ground beef and spinach - also served in a tomato sauce. My mother made those and they're still made among the Jews originating from Egypt. I also enjoy making a great roast pepper and tomato and salad that my father, originally from Morocco, still makes for every holiday.
