Mrs. Cubbison’s: Classic American Recipes

Mrs. Cubbinson’s Mrs. Cubbison’s stuffing and holiday dressing products are American classics with a contemporary edge. We have had the honor of interviewing Leo Pearlstein, Public Relations Director for Mrs. Cubbison's Foods, on the Cubbison legacy.  Read the true story behind Mrs. Cubbison's fine products.

How did the Mrs. Cubbison’s company get started?

Going back to the original Sophie Cubbison, she was an excellent cook and baker, and as a young bride, became partners with her husband and they formed the Cubbison Bakery.  Her first success came when she was making Melba toast and distributing it in Southern California and the neighboring states.  She developed her own recipe for poultry dressing (sometimes called stuffing) in 1948.  It happened because, in her Melba toast production, she had broken pieces of Melba toast and decided to add her favorite seasons and that resulted in her first product:  Mrs. Cubbison's Ready-To-Use Dressing for Poultry, Meat and Fish.

What kind of products do you offer?

The Company is strictly bread products, manufacturing a line of croutons and the three types of dressing: seasoned dressing, seasoned cornbread stuffing, and herbed cubed dressing.

What makes Mrs. Cubbison’s products stand out?

Being a specialist in baking and being a very talented cook and graduate home economist, Sophie stated:  “When you make a product, you try to please as many people as possible.  You can always add seasonings, but you can't take any out.”  Therefore, her brands of seasonings were meant to appeal to the masses, including children.  The specially baked bread, that is Melba toasted, is an added feature.

With reference to the croutons:  After a great deal of research, the company decided to make restaurant-style croutons with specially blended seasonings to offer a variety of flavors, such as, cheese and garlic, onion and garlic, regular seasoned, Caesar salad, etc.

Where can we purchase Mrs. Cubbison’s products?

The croutons can be found in the grocery department, usually in the same section as salad dressings.  Mrs. Cubbison's croutons are the number one grocery crouton product that is sold nationally.

The stuffing is the number one traditional stuffing in 11 Western states and can also be found in select markets in cities across the country, including WalMart superstores.

If you could summarize home cooking into one quote, what would it be?

Home cooking, whether simple or gourmet, can give a great deal of pleasure to the cook and the family enjoys favorite recipes, many of which have been handed down from generation to generation.  At the same time, adventurous cooks can experiment and “do their own thing.”
