Ingredients
4 lb. Filet of fish1 ea. Green pepper, chopped
3 ea. Garlic cloves, chopped
3 ea. Bay leaves
1 can Stewed tomatoes, pureed
2 lg. Onions, chopped
4 ea. Celery stalks, chopped
1/2 ea. Bunch parsley, chopped
Pinch of sugar
6 ea. Potatoes, cut-up
Olive oil
Directions
Saute onions, pepper, celery, garlic, and parsley in olive oil. Add blended tomatoes and bay leaves. Cook approximately for 1 hour, add sugar. Oil a roasting pan, season the fish with salt and pepper. Place fish in pan with cut-up potatoes. Pour sauce over potatoes and fish. Bake for approximately 1 hour. Basting every 15 minutes.
