Ingredients
1 Tbs. Vegetable oil1 Med size onion, finely chopped
1 Clove garlic, finely chopped
2 c. Cooked pinto, pea, or
Kidney beans, drained and mashed
1/4 c. Chopped parsley
1/2 c. Whole wheat bread crumbs
2 Egg yolks
2 Tbs. Cream or milk
1 Tsp. Salt
1/4 Tsp. Freshly ground black pepper
1/2 Tsp. Dried oregano
Wheat germ
Butter for sauteing
Barbeque sauce
Directions
1. Heat the oil in a small skillet and saute the onion and garlic untiltender but not browned. Combine with the beans, parsley, crumbs, egg yolks, cream, salt, pepper, and oregano and mix well. 2. Shape into 4 burgers and coat with wheat germ. Chill for 1 hour or longer. 3. Melt the butter in a large heavy skillet and saute burgers until lightly browned. Serve with barbeque sauce.
