Ingredients
1 lb. extra lean ground beef1 c. onion
2/3 c. barley, uncooked
2 c. beef broth
2 Tsp. oregano, fresh
1/4 Tsp. salt
1/4 Tsp. black pepper
1 16 oz. whole tomatoes
8 oz. water chestnuts, sliced
1 c. carrot, sliced
1 c. green pepper, chopped
Directions
Preheat oven to 350F. Cook beef and onion. Mix with remaining ingredients and place in 3 quart casserole dish. Cover and bake for 1 hour or until barley is tender.
