Beef Zucchini Casserole Hot

Ingredients

4 cups thinly sliced zucchini, about 3 medium

1 medium onion, sliced

2 Tablespoons butter or margarine

1/4 cup grated Parmesan cheese

1 1/2 pounds lean ground beef

1 Tablespoon flour

1 Tsp. salt

1/8 Tsp. pepper

2/3 cup ketchup

1/4 cup grated Parmesan cheese


Directions

In large skillet, saute zucchini and onion in butter until onion is tender. Pour into baking dish (10x6x1 1/2); sprinkle with 1/4 cup Parmesan cheese; set aside. In same skillet brown ground beef; drain excess fat. Stir flour salt pepper then ketchup into meat. Spoon meat mixture evenly over zucchini. Cover; bake in 350 oven 20 minutes. Remove cover; top with 1/4 cup Parmesan cheese; bake uncovered and additional 5 minutes or until cheese is lightly browned. Cut into squares to serve. Makes 6 servings. "

This recipe was incredibly fast and easy to make. The few ingrediants are common, so there wasn't really any shopping involved. When I cooked it, I used ground turkey instead of ground beef (less fat, faster cooking time). The zucchini needed a little extra salt to it to sharpen the flavor, so I would suggest salting it just after you put it in the pan to bake. Also, instead of just sprinkling the parmesan cheese on top, I would mix it into the meat and zucchini before the last five minutes of cook time. That would keep it from becoming just a mass of cheese on the top, but also just a suggestion. Definitely a recipe I will use again and again!
