Ingredients
5 Tbs. Olive oil1 med. Onion, chopped
1 med. Green bell pepper, diced
2 ea. Garlic cloves, chopped
2 1/2 c. Cooked black beans
2 c. Rice
4 1/2 c. Water
2 Tsp. Salt
1 ea. Bay leaf
2 Tbs. Olive oil
1/4 Tsp. Cumin
Black pepper to taste
Directions
In a large pot, heat oil till fragrant. Add onion, bell pepper and garlic and cook till tender, about 8 minutes. Add the remaining ingredients and cook over medium-high heat until all the water has been absorbed. It should take 15 minutes or less.
