Ingredients

2 Thin slices Eggplant (50 gm)

2 Tsp. Butter (10 gm)

1/4 c. Canned tomatoes (50 gm)

1/2 Tsp. Chives, chopped (2 gm)

Salt and pepper to taste

Directions

Brown the eggplant in butter. Add salt and pepper. Heat tomatoes in a separate pan and pour over eggplant. Sprinkle with chopped chives.
