Low Fat Banana Nut Muffins Hot

Ingredients

1 cup whole wheat flour

1 cup brown sugar, packed

1 Tbs. baking powder

1 Tbs. allspice, or pumpkin pie spice

1/4 Tsp. baking soda

4 each egg beaters (4 eggs)

1 1/2 cup bananas, mashed

1/2 cup macadamia nut coffee creamer, fat free

1 each liquid butter buds powder (Do not use butter Buds Sprinkles)

1 Tbs. vanilla

1/2 cup walnuts, chopped

Directions

Directions: Preheat oven to 400 degrees. Lightly coat a muffin pan with nonstick spray. In a large bowl combine flour, brown sugar, baking powder, allspice and baking soda, set aside.
In another large bowl, beat egg beaters until foamy. Add bananas, dry envelope of liquid butter buds (don't reconstitute, just throw in dry), coffee creamer and vanilla. Stir into dry ingredients until just blended. Fold in nuts.
Pour into prepared muffin pan and bake at 400 degrees for 20-22 minutes, until a toothpick comes out clean.

A thought about low fat food

I find that low fat foods are remedied quiet well with extra salt. This may not be a health-but's dream flavor additive, but I find it to be the essence of flavor in most dishes. Just a thought.
