Ingredients
2 pounds lean ground beef2 eggs, lightly beaten
1/2 cup bread crumbs
1/2 cup green bell pepper, chopped
1 large onion, chopped
2 carrots, grated
2 cloves garlic, crushed
2 Tbs. soy sauce
2 Tbs. brown sugar
2 Tbs. lemon juice
2 Tbs. fresh parsley, chopped
3/4 Tsp. ground ginger
1/2 cup brown sugar
1/2 cup soy sauce
Directions
Combine all but last 2 ingredients. Form into 1 or 2 loaves and place in a 9 X 9 baking dish. Bake at 350F degrees for 30 minutes. Remove from oven and drain off grease. Mix together the brown sugar and soy sauce and pour over meat. Bake for 30 more minutes and remove meat to serving platter. Pour sauce over sliced meat loaf or serve separately.
