I have been making this recipe for at least 20 years and it is delicious! Through the years I have modified it slightly. The dish is a tad mild for us, so I add a little bit of chopped jalapeno peppers along with the can of green chilis. I use flour tortillas and do not fry them in oil (are corn tortillas healthier than flour if you fry them in oil?). Typically, I cannot find PET Evaporated Milk, so buy a competing brand, which is always a larger can. I use the entire can because I don't feel there is enough sauce. Finally, I use a blend of Mexican cheeses to add a bit more flavor. I have made this every year for an annual Mexican themed Christmas Party and it is the first dish to disappear off the table!
