Ingredients
3 Tbs. Vegetable oil2 Tbs. Onion, chopped
1 Tbs. Garlic, chopped
5 c. Cooked long-grain rice
1 c. Tofu, diced
3 Tbs. Soy sauce
1/2 Tsp. White pepper
GARNISH: 1 Tbs. Cilantro leaves, chopped
1 c. Cucumber, sliced
2 Tbs. Red and green chilies, chopped
3 ea. Green onions, chopped
1 ea. Lime, cut into wedges
Directions
Heat the oil in a wok over medium-high heat. Add the onion and stir-fry for 3 minutes. Add the garlic and stir-fry until both are golden. Add the rice and the tofu and stir-fry for 3 minutes. Sprinkle with soy sauce and white pepper. Remove from heat and place in a serving dish surrounded with garnishes.
