Ingredients
1 c. Peeled and cubed butternut squash2 c. Vanilla soy milk
3 Tbs. Brown rice syrup
2 1/2 Tbs. Fruit flavored lecithin granules
1/4 Tsp. Nutmeg
1/4 Tsp. Vanilla extract
4 Tbs. Unsalted mirin, optional
Directions
Steam squash for 20 minutes or till soft. Drain and let cool for 5 minutes. Transfer to a blender, add remaining ingredients and blend till smooth. Refrigerate for 30 minutes.
