Ingredients
3 lg. Onions, chopped4 lg. Green bell peppers, chopped
4 lg. Tomatoes, peeled and chopped
1 lb. Yellow squash, chopped
2 med. Potatoes, cubed
5 Tbs. Olive oil
2 ea. Garlic cloves, minced
2 Tbs. Chopped parsley
1 1/2 Tsp. Salt
Directions
